Origin: Chiapas, Southern Mexico
Variety: Typica, Bourbon, Caturra
Process: Natural (Sun-Dried on Patios)
Elevation: 1400–1600 m
Soil Type: Volcanic Clay
Roast Level: Medium
Tasting Notes:
Red berry, milk chocolate, and dried fig with a smooth, creamy finish.
Description:
Grown in the lush highlands of Chiapas, near the Guatemalan border, this natural-processed coffee captures the warmth and sweetness of southern Mexico’s coffee heritage. The region’s volcanic soils and mountain microclimates create ideal growing conditions, while careful sun-drying and hand selection preserve the coffee’s natural fruit character.
In the cup, expect vibrant red berry notes layered over a foundation of milk chocolate and dried fig. The medium roast enhances the balance between bright fruit and comforting sweetness, resulting in a cup that’s both lively and smooth, perfect for everyday enjoyment or slow savoring.
Perfect For:
Those who love a sweet, fruit-forward coffee with a rich body and a mellow, satisfying finish.
Brewing Recommendations:
-
Pour-Over (V60 or Kalita): Highlights the berry sweetness and clean finish.
-
French Press: Enhances the chocolate and dried fruit depth with a fuller body.
-
Espresso: Smooth and naturally sweet — red fruit up front, chocolate in the finish; excellent with milk.
-
Cold Brew: Produces a velvety, dessert-like cup with hints of cocoa and dried fig.
